Gingerbread Pancakes

I’m already getting the Christmas feels! It's December, and my kitchen smells like Christmas. I love Christmas. It truly is the best time of the year.

Because I am a big fan of Breakfast, I am starting my December recipes with Gingerbread Pancakes. I am excited to be sharing this easy homemade Christmas Pancakes recipe with you. You can top the pancakes with maple syrup, chocolate syrup, berries, bananas, peanut butter or whipped coconut cream to add some extra flavors to them.

Tips To Make Perfect Vegan Pancakes

  • Milk - Instead of regular milk, use your favorite non-dairy milk. I recommend you use an unsweetened and unflavoured one. Homemade milk, like cashew or oat milk, is fine, too.

  • Egg - To make egg-free pancakes, the most effective method for this recipe is to combine extra baking powder with a bit of baking soda and an acid like vinegar or lemon juice. By using this combination, you replace the leavening that the raising agent and the eggs would otherwise provide. Your results should be just as good as they would be with a batter made with eggs.

  • Stay undermixed! Don’t overmix your batter if you want the very best texture for your pancakes.

  • Include a tiny bit of oil in the batter to make all the difference in terms of texture.

  • For fluffy pancakes, the batter needs to be thick. Thicker than pancake batter made with eggs.

  • The trick to cooking good vegan pancakes is to cook them to a high temperature and to let them cook slowly. That way, they become fluffy on the inside. If you rush them, they can end up a little damp inside, and that's never good when it comes to pancakes.

Gingerbread Pancakes


I recommend starting your December days with these pancakes. They are easy to make and the whole family will love them. Flavored with my special Christmas Spice Blend, these gingerbread pancakes are a nice change from the traditional version of pancakes. These gingerbread pancakes are the perfect holiday breakfast treat. These soft & fluffy Vegan Gingerbread Pancakes, are full of rich, festive gingerbread flavors, and will be the best way to start off your Christmas cheer!


RECIPE

Ingredients

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tbsp Christmas Blend Spice

  • pinch of salt

  • 1 tsp date syrup ( or maple Syrup or 1 tbsp brown sugar/ coconut sugar)

  • 2 cups oat milk

  • 2 tsp apple cider vinegar

  • 1 tsp coconut oil and more for frying


Preparation

  1. Start by mixing the oat milk with the apple cider vinegar and let it sit for 5 minutes until it starts curling like buttermilk.

  2. Mix all the dry ingredients into a separate bowl and then add the oat milk, coconut oil and date syrup.

  3. Fry the pancakes in a bit of coconut oil until golden brown on the bottom and bubbling on the top. Flip and cook until golden brown on the bottom. Keep warm until served.

  4. Top with yogurt, fruit, nuts, maple syrup, etc.

  5. Enjoy!
